Adobo Connection

I was able to try dining at the newly opened Adobo Connection in their SM Sta. Rosa Branch. I insisted mom to take our lunch there, just a week after they opened. They're finally here in Laguna at last!

Like most Filipinos, I am a self confessed adobo freak. For me it's a staple next to rice. I couldn't live without eating an adobo dish within a week. In fact, it's the very first traditional Filipino meal I learned to cook in High School. Since then, I experiemented a couple of ingredients that could complement the traditional taste.

Adobong Hito

Adobo is a popular dish and and at the same time a cooking process in Philippine cuisine that involves meat or seafood marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade. This version however presents that fish like Pantat or Hito (Catfish in english) can also be cooked Adobo inspired.

When I hear the word Adobo, images of chicken and pork comes to mind. Ultimately, when my relatives back in the province showed me their adobo version, I became even more impressed with the versatility of cooking this traditional Pinoy recipe. Their specialty, Adobong Kambing!

Recipe: Sweet Honey Pork Adobo

Adobo is my family's all time favorite Filipino recipe. I suppose there are thousands of adobo recipes out there, as many as the number of houses in the Philippines... I mean who in the world (err, I mean Philippines) has not been captured by the simplicity yet satisfying taste of adobo? I probably have 10 variety of adobo recipes and I'm gonna share one today :)

Recipe: Adobong Pusit

Ingredients:
1 k pusit (squids)
1 tbsp.oil
1 tbsp. garlic, macerated
3/4 c vinegar
1 tbsp salt
1/4 tsp. black pepper

Procedure:
1. Clean the pusit and remove the ink sac.
2. Heat the oil and saute the garlic until brown.
3. Add the pusit, vinegar, salt and pepper.
4. Overcooking the pusit will result in having a rubbery pusit.
5. Add ink sac just before removing from fire.
6. Serves 8.

To kick start my first blog entry, I want to share with you a recipe closest to my heart. I’m serious about this blog therefore I want my first post to be extra special – with this in mind, let me share with you my ultimate super special recipe. Frankly, this is just how far I could cook for now, but trust me, this is vavavooom delicious! Yey! I’m so excited to share my recipe, I’m proud of it because this is one great dish that makes my younger brothers and sisters proud of me. Lol :)
