Another all time favorite Pinoy food is Arroz Caldo. Wanting to serve this dish to my younger sister who at that time couldn't eat well because of an aching tooth, I surfed for yet another easy recipe on how to make Chicken Arroz Caldo. Here goes my recipe:
Chicken Arroz Caldo |
Ingredient:
1 cup uncooked malagkit rice
1 k chicken in small assorted cuts
ginger strips
6 cups of chicken broth (you can use Knorr chicken broth cubes)
2 tbsp patis
1 medium sized onion, chopped
4 cloves of garlic, chopped
fried garlic, minced (to garnish)
1 tbsp scallions (to garnish)
cooking oil
Procedure:
1. Saute garlic, onion and ginger in oil.
2. Add chicken and fish sauce and stir fry until light browned.
3. Add malagkit rice and chicken broth. Simmer in low fire and stir occasionally until both rice and chicken is cooked.
4. Serve hot and garnish with fried garlic and scallions.
