Recipe: Ginisang Ampalaya with Egg

Craving for a healthy affordable side dish? Why not try this simple no non-sense goodness most older people would surely appreciate. As plain as this dish looks, it interestingly brings back old memories of childhood. I prepared this easy-to-cook 10 minute Ginisang Ampalaya with Egg meal especially for my mom served along with my 6-spice fried chicken and it was down home-goodness!
Ampalaya with Egg

servings: good for 2-3 (as side dish) 

Ingredients:
Ampalaya, sliced in half and scooped out seeds
2 Eggs, beaten
1 large tomato, sliced
medium sized onion, sliced
2 cloves of garlic, minced 
salt and pepper
1/4 cup of water
cooking oil

Procedure:
1. Saute onion, garlic and tomato.
2. Add the ampalaya, season with salt and pepper then add water and let it simmer for about 5 minutes.
3. Pour in beaten eggs and mix. let it cook for about 2-3 minutes.  

This vegetable recipe is also known as Sautéed Bitter Melon and can be best served when you're planning for a Lowfat Diet.

  1. The ampalaya has to be sliced further into 1/8 inch slices. Right?
